No-Bake Pumpkin Pie Jars for a Gut-Friendly Thanksgiving

Stop baking pumpkin pie. Make it in a jar instead. You get all the flavor of the real thing, a crunchy oat base and a creamy filling, without a heavy butter crust sitting in your belly after a big dinner.

These no-bake pumpkin pie jars take 10 minutes of work and an hour in the fridge, and the recipe makes 2 small jars.

Why it works

  • Oats and pumpkin bring soluble fiber, the kind your good bacteria feed on.
  • Greek yogurt adds live cultures and protein, so a small jar feels satisfying.
  • No butter crust and no refined sugar: the oats, pecans and a little maple syrup do the job.
  • Portioned in a jar, so dessert ends where the jar ends.

Tip: make a tray of jars on Thanksgiving morning. They're ready when dinner is, and the oven stays free for everything else.
